Food & Workout Diary – week of August 8

MBH and I have decided to make a real effort to eat all our weeknight meals at home and to bring our lunches to work. Two weeks in, I only cheated on the first day (Panera!) and we only ate out twice on the weekend, which is honestly a HUGE improvement for us. I’m also feeling much better about the amount of veggies we’re eating – I can make sure he’s getting tons!

He is still not happy about never eating meat at home, but his rating of the lasagna was “as delicious as possible without meat,” so I am of course taking that to mean it was DELICIOUS (which it really, really was.)

MONDAY:
Workout: 20 minutes power yoga
Breakfast: Coffee with Agave Nectar
Lunch: Greek Salad (Cucumber, Kalamata Olives, Cherry Tomatoes, Feta Cheese, Oil & Vinegar)
Snack: One Gansita (a chocolate covered Mexican twinkie), two glasses of OJ
Dinner: Vegetable Lasagna (Zucchini, Mushroom, Spinach, Yellow Bell Pepper, Red Bell Pepper, Onions & Garlic – with tomato sauce, and Ricotta and Parmesean cheese)

Fruits: 4
Veggies: 3

TUESDAY:
Workout: 30-minute run, 1 hour yoga
Breakfast: Coffee with Agave Nectar, Banana
Lunch: Vegetable Lasagna leftovers, Glass of Apple Juice
Snack: Handful of carrots
Dinner: Last two portions of Veggie Lasagna & Glass of Red Wine

Fruits: 2
Veggies: 5

WEDNESDAY:
Workout: 1 hour cardio & strength
Breakfast: Coffee with Agave Nectar, Oatmeal with Blueberries
Lunch: California Roll
Snack: About a billion “Flavor Grove” Pistachios (Sea Salt & Black Pepper) and a glass of Apple Juice
Snack #2: (I was HUNGRY TODAY!!!) Two handfuls Almonds and another glass of Apple Juice
Dinner: One Gansito (the Mexican chocolate-covered Twinkie), two slices Cheese Toast (CL was working late, if you couldn’t guess…), glass of Cranberry Juice

Fruits: 4
Veggies: 1

THURSDSAY:
Workout: 30-minute run, 1 hour yoga
Breakfast: Oatmeal with Blueberries, Coffee with Soy Milk (I like my coffee WAY less black – much more comfortable with the soy milk than the Agave Nectar)
Snack: Two handfuls Almonds
Lunch: New England Clam Chowder, Glass of Apple Juice
Snack #2: More Almonds, second glass of Apple Juice
Dinner: Cheese & Mushroom Quesadilla with Salsa and Sour Cream, 2 or 3 Yuenglings

Fruits: 3
Veggies: 2

FRIDAY:
Workout: None
Breakfast: Skinny Vanilla Latte
Lunch: Grilled Cheese & Tomato Sandwich, French Fries & Ketchup
Dinner: Boiled Shrimp, Salad, Bruschetta, Rice with Corn, glass of Muscato

Fruits: 2
Veggies: 2
