This is a great summer meal that’s both fresh & easy and best of all, it’s just one pot. Simple ingredients, just scallops, spinach, cannellini & vegetable broth and spices to your liking. MBH whipped it up in less than 10 minutes for a fast way to wrap up a busy Sunday. Full recipe here, but MBH & I make a few adaptations on our own. A sprinkle of Italian seasonings, a dash of garlic powder, and MBH’s secret ingredient on the scallops. Add a healthy glass of white wine and enjoy!
